ZUCCHINI AND MUSHROOM FRITTATA 
3 tbsp. olive oil
2 c. thinly sliced zucchini
1 c. sliced mushrooms
2/3 c. minced green onions
1/3 c. minced fresh parsley
2 cloves minced garlic
7 to 8 eggs, beaten
3/4 c. grated Parmesan cheese
1/2 tsp. each basil and salt
Pepper, to taste

Heat oil in large skillet and saute zucchini, mushrooms, onions, parsley and garlic until well softened. Combine in a bowl with eggs, cheese, basil, salt and pepper.

Pour into a greased 9 inch square baking dish and bake for 20 to 25 minutes in a 350 degree oven, or until set. Serve hot or cold.
