CRUNCHY SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes
1 c. sugar
2 eggs, beaten
1/3 c. butter, melted
1 tsp. vanilla

TOPPING:

1 c. brown sugar
1 c. coconut
1/3 c. butter, melted
1/3 c. flour
1 c. nuts, chopped (pecans)

Mix all casserole ingredients together and place in 9 x 13 inch pan.

Blend together butter and flour, coconut, brown sugar, and nuts; crumble over sweet potato mixture. Bake at 350 degrees for 30 minutes.
