Stuffing

The evening before the big feast, prepare the turkey and stuff it with your favorite stuffing. Place bird in a comfortable large pan on a rack. Give it a facial with soft butter and generously salt it. Tie the wings to the body rather loosely around the middle. Cover the bird with a sheet of heavy duty aluminum foil. Tuck it down around the sides of the bird, but not over the edges of the pan. Just before bed-time set oven at 275 degrees. Figure to cook the bird 30 minutes per pound. About 7 hours for a 20 pounder, 8 for over that.

Put bird in oven and go to bed. Set your alarm. When the alarm goes off, turn off the oven and go back to bed. The bird is fine. Let him alone. An hour before dinner, take foil off turkey, and keep him out of oven while you heat it to 325 degrees. He'll look pale, but he'll brown soon. Smear juices form bottom of pan all over him and put him in oven. Baste every 10-15 minutes until turkey is brown, about an hour.
