CRUSTED PINEAPPLE SLICES 
1 lg. pineapple
1/2 c. chopped raisins
1/4 c. chopped walnuts
2 egg whites
2 tsp. lemon juice
3/4 c. sugar
1/2 tsp. grated lemon rind
Flaked or shredded coconut

Remove the skin from your pineapple and cut the flesh into rounds, removing the core. Fill the cavity of each slice with a mixture of raisins and walnuts. Combine the lightly beaten egg whites with the lemon juice, sugar and lemon rind in a heatproof bowl. Beat briskly over boiling water for 5 minutes, then remove from the heat and fold in the coconut. Cool slightly and pile onto each pineapple slice. Brown the tops lightly under a medium hot broiler and serve at once.
