RED VELVET CAKE 
1 3/4 c. Wesson oil
2 c. sugar
2 1/2 c. cake flour (plain)
2 eggs
1 tsp. vinegar
2 tsp. cocoa
1 oz. red food coloring
1 tsp. salt
1 c. buttermilk
1 tsp. baking soda
1 tsp. vanilla

Beat oil, sugar and eggs. Mix in a cup cocoa, vinegar and food coloring. Pour in oil mixture. Mix in flour and buttermilk and vanilla and soda. Bake in 3 round pans, greased and floured. Bake at 325 degrees for 35 to 45 minutes.

CREAM CHEESE FROSTING:

3/4 stick butter
8 oz. cream cheese
1 tsp. vanilla
1 c. chopped pecans
1 bx. confectioners sugar

You can use 11 or 12 ounce cheese and a box and 1/2 of sugar.
