RED VELVET CAKE 
1 1/2 c. Wesson oil
2 1/2 c. self-rising flour
1 1/2 c. sugar
1 c. buttermilk
2 eggs
2 tsp. cocoa
1 tsp. vanilla
1 tsp. vinegar
1 oz. red food coloring

Mix all together and beat well. Bake in 3 well greased and floured 9 inch pans 30-40 minutes at 350 degrees.

ICING:

1 box powdered sugar, sifted
1 sm. cream cheese
1 stick butter
1 tsp. vanilla
1 c. chopped nuts

Cream butter and cheese. Add sugar and vanilla. Mix well and spread. Sprinkle nuts on each layer (add few drops of cream if not soft enough).
