1 lb. 2 oz. Cornish hen

Wash with water and dry. Salt and pepper inside and out. Stuff with dressing or instead of using dressing, put 1/2 orange or 1/2 apple in cavity. Bake 10 minutes at 400 degrees; 1 hour at 350 degrees; 15 minutes more for hen over 1 pound 2 ounce. Baste with butter or ginger ale.
