ITALIAN RUMP ROAST 
1 (4 lb.) beef roast
4 cloves garlic (slivered)
1 1/2 tsp. salt
1/2 tsp. black pepper
1/4 c. chopped parsley
1 tsp. oregano
1 tsp. basil
1/2 c. olive oil
1 lg. onion, sliced
1 1/2 c. dry red wine

Cut slits in meat and insert garlic slivers. Combine spices. Brush roast with oil then roll in spice mixture. Put roast in crock pot, add onions and wine. Let cook until meat is tender and cooked through, approximately 3-4 hours. Great to do before a busy day!
