SWEET POTATO MUFFINS 
1 1/4 c. sugar
1 1/4 c. cooked, mashed sweet potatoes
1/2 c. butter, room temperature
1 1/2 c. flour
1 tsp. cinnamon
1 c. milk
1/2 c. raisins
1/4 c. walnuts
2 tbsp. sugar with
1/4 tsp. cinnamon

Preheat oven to 400 degrees. Beat sugar, sweet potatoes and butter until smooth. Add eggs and blend well. Sift together flour, baking powder, spices and salt. Add raisins and nuts; spoon into paper lined muffin cups. Bake 25-30 minutes, or until muffins test done. Makes 24 muffins.
