WILLIAMSBURG SWEET POTATO
MUFFINS
 
1/2 c. butter
1 1/4 c. sugar
2 eggs
1 1/4 c. sweet potatoes, mashed
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. milk
1/4 c. pecans, chopped
1/4 c. raisins (optional)

Preheat oven to 400 degrees. Grease muffin pans. Cream butter, sugar, add eggs. Mix well, blend in sweet potatoes. Sift flour, baking powder, salt and spices, and add to first mixture alternately with milk. Don't over mix. Fold in nuts and raisins. Fill tins half full and bake 25 minutes.
