SWEET POTATO MUFFINS 
3/4 c. all purpose flour
1/2 c. chopped pecans
1/4 c. packed brown sugar
1 tbsp. baking powder
1 tsp. salt
2 eggs, beaten
1 1/2 c. cooked mashed sweet potatoes
3/4 c. milk
1/2 c. melted butter
Cinnamon and sugar

Combine first 6 ingredients. Combine eggs, sweet potatoes, milk, and butter. Make a well in center of dry ingredients and add potato mixture to it. Stir until moistened. Spoon into greased muffin pans and sprinkle with cinnamon and sugar. Bake at 425 degrees for 35 minutes. Makes 1 1/2 dozen muffins.
