SYRIAN BREAD 
3 1/2 c. flour
1 pkg. yeast
1 1/4 c. hot tap water
2 tsp. salt

Mix 1 cup flour, yeast, salt in bowl. Mix well. Gradually add water. Beat 2 minutes, medium speed. Add 1 cup flour. Beat 2 minutes high speed. Add rest of flour. Mix with wooden spoon. Put on floured board on knead 5 minutes until elastic. Divide into 8 balls (16 if smaller ones desired).

Roll each until flat - 4 inch circle (2 inches if making smaller ones). Rest 45 minutes. Bake at 500 degrees on greased sheet with bottom side up about 10 minutes.

For pita bread, limit salt to 1/4 teaspoon and add 1 teaspoon sugar.

Instead of baking this in the oven, I roll out with a rolling pin, then pull and stretch like you would pizza crust dough, then I bake it on a 500°F Lefse griddle. One minute on each side or til brown spots appear. It is so easy this way.
