ITALIAN SQUASH CASSEROLE | |
1 qt. steamed zucchini 1 lb. ground chuck 1 c. chopped onion 1 clove garlic, crushed 1 tsp. salt 1 tsp. basil 1/2 tsp. oregano 1/4 tsp. pepper 2 c. cooked rice 1 (8 oz.) can tomato sauce 1 c. cottage cheese 1 egg, beaten 1 c. grated sharp cheddar cheese Cut zucchini coin-like about 1/3 inch thick. Steam for 4 minutes. Saute ground chuck, onion and spices. Cook rice. Mix together egg and cottage cheese. Add tomato sauce to ground meat. Stir in rice. Layer in 9 x 13 inch casserole dish as follows. 1) Zucchini. 2) Ground chuck, tomato sauce and rice mixture. 3) Cottage cheese mixture. 4) Zucchini. 5) Cheddar cheese on top. Bake at 350 degrees for 35-40 minutes. |
