LEMON VINAIGRETTE 
1/2 c. freshly squeezed lemon juice
Salt to taste
Dash of pepper
1/2 c. salad oil or olive oil, or a combination of both

In a jar, combine lemon juice, salt, pepper and oil; mix thoroughly. If made ahead, cover and refrigerate but bring to room temperature and mix again before adding to a salad. Makes 2 cups.
