PAUL'S BACON AND POTATO PIE 
1 lb. bacon, cut into 1-inch pieces
8 eggs, whisked until foamy
2 c. grated cheddar cheese
1/2 tsp. pepper
1 med. onion, chopped
1 lb. potatoes (about 4 med.) peeled and grated

Grease a 9x13 baking dish. In a frying pan brown the bacon until crisp; drain. Combine bacon with remaining ingredients. Spread evenly in prepared baking dish. Bake at 350 degrees for 45 minutes. Cut into squares.

NOTE: Grate potatoes into a bowl of cold water. Pour into a colander and rinse with fresh water when ready to mix with other ingredients. Lightly press them with a wooden spoon against the colander to remove excess moisture.
