2 eggs, well beaten 1 c. butter, no substitute 1 tsp. lemon juice 2 tsp. cream of tartar 1 c. coconut 2 c. brown sugar 2 tsp. ginger 2 tsp. baking soda 4 c. flour Cream butter, sugar, lemon juice until creamy. Add eggs and beat sift flour, ginger, cream of tartar, baking soda. Add to creamed mixture, fold in coconut. Make small balls, press with a fork or a glass dipped in sugar. Bake at 400 degrees for 6 to 7 minutes. Don't brown. Keeps well and freezes well. |
