MANICOTTA 
1 c. flour
1 c. water
1/2 tsp. salt
3 eggs

Mix all ingredients together until smooth. A whip works well for this. The mixture will be thin. Lightly grease an electric fry pan or skillet; have heat on 350 degrees. Make the shells for manicotta the same as you would for a crepe. Take a large mixing spoon full of batter in skillet and smooth thin. Crepe will not have to be turned over; you will be able to see when its done. Mixture makes 12 to 15 shells.

FILLING:

1 lb. Ricotta cheese
2 eggs
Grating cheese to your taste
1/2 lb. Mozzarella, grated
1 lg. jar of your favorite sauce

Mix ingredients together, put regular tablespoon of filling in crepe and roll up. Place some sauce in bottom of casserole pan and place crepes in it. Put more sauce on top of crepes when pan is full. Bake in oven at 350 degrees for 1/2 hour.
