PUMPKIN CUSTARD PIE 
2 c. pumpkin
2 egg yolks, beaten
1 tbsp. butter, melted
1 tbsp. flour
Grated rind of 1 orange
1 tsp. salt
1 c. sugar
1/4 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. cinnamon
1 tsp. vanilla

Stir all ingredients together. Beat well. Fold in beaten egg whites. Pour into unbaked pie shell. Bake in moderate oven for 45 minutes. For extra treat, add 1 cup heavy cream to filling mixture.
