REDUCED CALORIE PUMPKIN CUSTARD 
2 eggs
1 (1 lb.) can pumpkin
22 pkgs. Equal
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. ground cloves
1/2 tsp. salt
1 (12 oz.) can evaporated skimmed milk

1. Slightly beat the eggs.

2. Add the next 6 ingredients.

3. Slowly add and blend thoroughly 1 (12 oz.) can evaporated skimmed milk.

4. Pour into 9" or 10" pie pan that has been sprayed with vegetable coating for pans.

5. Bake at 350 degrees for 45 minutes or until inserted silver knife comes out clean.

6. Divide into 6 equal servings.

One serving provides 14 grams of carbohydrates, 8 grams of protein, 1.5 grams of fat and 105 calories. Can use for one bread exchange plus one meat exchange.
