LO CAL PUMPKIN CUSTARD 
2 c. pumpkin, cooked or canned
2 eggs
1 c. skimmed milk
1 tsp. cinnamon
1 tsp. ginger
Non caloric sweetener (as desired)

Beat eggs and combine with noncaloric sweetener in amount you desire. Add milk and mix well. Add the spices and pour into 8-inch pie pan. Bake in 350 degree oven 50-60 minutes. 61 calories per serving - 6 portions.
