FRESH APPLE CAKE WITH VANILLA
SAUCE
 
4 c. diced apples
2 eggs
1 1/2 c. sugar
2 tsp. cinnamon
1/2 c. salad oil
1 tsp. salt
1 tsp. baking soda
1 c. chopped nuts
2 c. flour

VANILLA SAUCE:

1/2 c. butter
1 c. sugar
1 tbsp. cornstarch
1/2 c. evaporated milk
1 tsp. vanilla

CAKE: Put apples in bowl, break eggs over and stir together. Add sugar, oil and nuts. Then add flour, salt, soda and cinnamon. Bake at 350 degrees for 45 minutes in 9x12 pan.

SAUCE: Melt butter, then combine with sugar and cornstarch. Add evaporated milk and vanilla. Bring to a rolling boil, stirring constantly (scorches easily). Pour sauce over cake and serve.
