SPANISH CUPCAKES 
2 2/3 tbsp. shortening
1/2 c. sugar
1 egg
1/4 c. milk
7/8 c. flour
1/4 tsp. salt
1/4 tsp. cinnamon
1 tsp. baking powder

Cream the shortening, add sugar and yolk of an egg. In second bowl, mix flour, baking powder and salt. Add this to first mixture alternating with milk. Add flavoring then cut and fold in the beaten egg white. Put into greased cup cake tins and bake at 375 degrees.
