GOURMET POTATOES 
6 med. white potatoes
1/4 c. butter, melted
1/3 c. chopped onion
1/4 tsp. pepper
2 c. shredded cheddar cheese
1 1/2 c. sour cream
1 tsp. salt
2 tbsp. butter, cut into dots

Boil potatoes in skins. Chill, peel and coarsely grate in a large bowl. Stir in cheese and butter. Fold in sour cream, onion, salt and pepper. Place in a greased 2-quart casserole (11x7 dish) and dot with remaining butter. Bake at 350 degrees for 30 minutes. Serves 6-8.
