$100 CHEESECAKE 
2 oz. butter
1 egg
1 c. flour
1/2 tsp. baking powder
4 tsp. sugar

FILLING:

1 (8 oz.) pkg. cream cheese
1 (3 oz.) pkg. cream cheese
1 tbsp. lemon juice
2 c. milk
9 tbsp. sugar
1 tsp. vanilla
2 eggs, separated
3 tbsp. flour

CRUST: Cream butter and sugar well. Add flour, baking powder and egg. Beat thoroughly by hand - do not use mixer. Spread with fingers on bottom and sides of a 2 quart Pyrex glass baking dish. Crust will be thin.

FILLING: Cream the cheese and sugar. Add flour, egg yolks, vanilla, lemon juice, and milk. Beat egg whites until stiff and fold into cream mixture. Pour batter into crust. Sprinkle with cinnamon. Fruit can be used - spread on the crust before adding the filling. Bake at 325 degrees for 45-55 minutes.
