ZUCCHINI FINGER FOOD 
3 c. grated zucchini (2-3 med. size)
1 onion, finely chopped
2 cloves garlic, pressed
1/2 c. corn oil
1/2 c. Monterey Jack cheese, grated
4 eggs
1 c. Bisquick
Salt & pepper to taste

Mix zucchini, onion, garlic, oil, cheese and Bisquick. Add eggs, one at a time. Season to taste. Pour into 9 x 2 inch baking pan. Bake for 30 minutes at 375 degrees or until top is golden brown.
