BROCCOLI BEEF 
1 c. sliced round steak, chicken or pork
2 tbsp. soy sauce
1 tbsp. saka or sour wine
1/4 c. green onions
2 tsp. corn starch
6 tbsp. oil
6 c. sliced broccoli
2 tsp. sugar
3/4 c. water
1/2 tbsp. fresh chopped or dried ginger root soaked in 1 1/2 tbsp. water

Slice meat across grain into strips. Slice broccoli into 1/8 inch pieces making little "trees". Squeeze liquid from ginger and mix with soy sauce and sugar. Make smooth paste of corn starch and 1 tablespoon water, then add remaining water. Heat 1/2 oil until very hot, fry beef for few seconds, add 1/2 soy mixture, heat briefly, remove.

In same wok or skillet, heat remaining oil and fry broccoli 1 or 2 minutes. Add remaining soy mixture, allow to come to full boil. Add beef, onions, corn starch mix. Bring to boil and cook until thickened, stirring occasionally. Serve with hot rice. Be sure to not over fry meat and broccoli.
