OATMEAL CAKE WITH COCONUT FROSTING | |
1 1/2 c. boiling water 1 c. quick oatmeal 1/2 c. shortening 1 c. brown sugar 1 c. white sugar 2 eggs 1 1/2 c. flour 1 tsp. cinnamon 1 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla Pour boiling water over oatmeal and let stand. Cream shortening and sugars. Beat in eggs. Add flour and other ingredients at once. Mix. Add oatmeal and mix well. FROSTING: 3/4 c. brown sugar 3/4 c. white sugar 1 tbsp. white syrup (Karo) 3/8 c. milk 1/8 c. shortening 1/8 c. butter Pinch of salt 3/4 c. coconut Boil 1 minute, all ingredients except coconut. Then add coconut, and let sit until spreadable. |
