CARROT RELISH 
4 lg. onions
2 qts. carrots
5 c. sugar
2 qts. cucumbers, unpeeled
5 c. vinegar
1 tsp. celery seed
1 tbsp. mustard seed
1 tbsp. mixed spices
Pickling spices
1 tsp. salt

Put spices in a bag. Grind onions, carrots and cucumbers. Sprinkle with 1/3 cup salt. Let stand overnight. The next day cook vegetables with other ingredients about 1/2 hour or until vegetables are tender. Put in sterilized jars and seal.
