CUCUMBER AND CARROT RELISH 
4-6 coarsely ground cucumbers (3 1/2 c.)
6 med. carrots, ground (1 1/2 c.)
2 med. onions, ground (1 c.)
2 tbsp. salt
2 1/2 c. sugar
1 1/2 c. vinegar
1 1/2 tsp. celery seed
1 1/2 tsp. mustard seed

Combine ground vegetables and salt; let stand 3 hours. Drain vegetables. Combine remaining ingredients and bring to a boil. Add vegetables, simmer, uncovered 20 minutes. Seal at once.
