CARROT CUCUMBER RELISH | |
4 to 5 unpared cucumbers, coarsely ground (3 1/2 c.) 6 med. carrots, coarsely ground (1 1/2 c.) 2 med. onions, coarsely ground (1 c.) 2 tbsp. (pickle) salt 2 1/2 c. sugar 1 1/2 c. white vinegar 1 1/2 tsp. celery seed 1 1/2 tsp. mustard seed Combine ground vegetables; stir in salt. Let stand 3 hours; drain. Combine remaining ingredients and bring to boil. Add vegetables and simmer 20 minutes. Seal at once in hot sterilized jars. Makes 2 1/2 pints. Chill before serving. |
