OLD FASHIONED RICE PUDDING 
6 c. milk
1 c. half and half
3 egg yolks, beaten
3/4 c. rice
3/4 c. sugar
1/4 tsp. salt

Rinse heavy saucepan in cold water - do not dry. Pour in milk, bring to boil; add rice, reduce heat. Simmer until rice is tender. Stir frequently. Beat eggs, sugar, vanilla, half and half; stir in rice mixture. Bring to a boil and pour into serving dish. Top with egg whites beaten with 1/2 teaspoon cream of tartar and 1/4 cup sugar. Brown lightly.
