OLD-FASHIONED CREAMY RICE
PUDDING
 
1/2 c. uncooked rice, not instant
1/2 tsp. salt
1/4 c. sugar
1/4 tsp. cinnamon or nutmeg or to taste
2 1/2 c. milk
1/2 c. seedless raisins, if desired

Combine above ingredients in a double boiler. Cover and cook until rice is tender and milk is almost absorbed, 1 hour, stirring frequently. Serve warm. Makes 6-8 servings.
