STRAWBERRY CHEESECAKE 
CRACKER CRUST:

2 pkgs. graham crackers
2 to 3 tbsp. powdered sugar
1/2 c. (1 stick) butter, melted

CHEESECAKE:

1 small pkg. lemon Jello
1 c. boiling water
1 (8 oz.) pkg. cream cheese
1 c. sugar
1 tsp. vanilla
1 (12 oz.) can evaporated milk, chilled

Dissolve Jello in 1 cup boiling water. Cool. Line pan with graham cracker crust. Cream cream cheese, sugar, vanilla, add to Jello mixture and blend. Beat milk until stiff, fold Jello mixture into milk. Pour into cracker crust. Sprinkle with graham cracker crumbs. Chill.

STRAWBERRY GLAZE:

1 c. water
3 tbsp. cornstarch
1 c. sugar
3 tbsp. strawberry Jello (dry powder)

Boil water, add mixed dry ingredients. Boil 3 to 5 minutes until dark in color. Cool and pour over fresh strawberries arranged over top of cheesecake. Serve.
