MAPLE UPSIDE DOWN CAKE 
3 tbsp. butter
1 c. maple sugar
1 c. pineapple chunks
3 eggs, separated
1 c. sugar
1/4 c. milk
1 tsp. lemon extract
1 c. sifted flour
1/2 tsp. salt
1 1/2 tsp. baking powder

Melt butter in bottom of 8 inch round cake pan. Mix in maple sugar; arrange pineapple chunks to cover bottom of pan. Mix beaten egg yolks with sugar, add milk and extract then dry ingredients sifted together. Fold in stiffly beaten egg whites, pour batter over pineapple. Bake in 350 degree oven about 45 minutes. Invert and serve cut in wedges, garnished with unflavored whipped cream. Makes 6 servings.
