PEANUT BUTTER COOKIES 
1 c. shortening
1 c. granulated sugar
1 c. brown sugar, firmly packed
1 c. peanut butter
2 eggs, beaten
1 tsp. vanilla
3 c. flour
2 tsp. baking soda
1/8 tsp. salt

Cream shortening and sugar until smooth and fluffy. Add sugar gradually, beating well after each addition. Continue beating until light and fluffy. Add peanut butter and beat until well blended. Add eggs and vanilla and stir until well blended.

Sift flour, soda and salt together. Gradually add to sugar mixture, beating well after each addition. Cover and chill for 2 hours. Shape into balls about 1 inch in diameter. Place on greased cookie sheet. Flatten by making a criss cross design with fork. Bake at 375 degrees for 10 minutes or until lightly brown and crisp. Cool on rack. Makes 6 or 7 dozen.
