ZUCCHINI PIE 
3 c. diced, unpeeled zucchini
1 lg. chopped onion
1/2 c. grated cheddar cheese
1/2 c. salad oil
4 beaten eggs
1 c. bisquick
3 tbsp. minced parsley
Salt and pepper to taste

Grease 9 inch pie plate. Combine all ingredients, mixing only until zucchini is well covered with batter. Bake at 350 degrees for 35 to 40 minutes. Serve hot or cold.
