PERFECT CROCK-POT APPLESAUCE 
tart apples (at least 5 lb. or enough to fill large Crock-Pot to top)
3/4 cup apple cider vinegar
1/2 to 3/4 cup dark brown sugar
1 tbsp. lemon juice
1 tsp. vanilla extract
1 tsp. ground cinnamon
a dash each of ground cloves and nutmeg

Quarter, peel, and core apples, slicing thinly to completely fill Crock-Pot. Add remaining ingredients (start with 1/2 cup or less brown sugar). Stir well and cook on HIGH for five hours, stirring occasionally, or on LOW overnight.

Note: Add more sugar to taste, if needed.
