BUTTERMILK PANCAKES 
1 1/4 c. buttermilk
1 lg. egg
1 c. flour
1 tbsp. vegetable oil
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda

Beat together the buttermilk and egg; add all dry ingredients and beat until smooth.

A Teflon-coated electric skillet works best to cook pancakes. I spray a little Pam to prevent sticking. Preheat skillet to 350 degrees. Pour about 1/4 cup batter for each pancake. Cook until pancakes puff up and bubble. Turn and cook until golden brown. Makes about 12 small pancakes.
