PISTACHIO COOL WHIP SALAD 
1 (3 oz.) pkg. instant pistachio pudding
1 (9 oz.) container Cool Whip whipped topping
1 (16 oz.) can crushed pineapple, do not drain
1/2 c. miniature marshmallows
1/2 c. chopped pecans

With spatula, lightly mix Cool Whip and dry pistachio pudding together. Add remaining ingredients. Must be chilled overnight.

I use vanilla sugar free instant pudding and omit marshmallows. This makes a nice diabetic salad or dessert. Have also used other light diced fruit. Everyone loves it.

You can also make this a lime-Pistachio Ambrosia Salad. Disolve 1 package of sugar free Lime Jello into 1/4 cup of boiling water. Add Dry Pistachio Pudding, pinapple, and fold into Coolwhip. Add Marshmellows and Pecans.......Awesome! (you can also use sugar free pistachio pudding, and Light cool whip without sacrificing flavor!!)

Mom use to make something like that and we called it the green stuff, everyone loved it and it was not Thanksgiving without it. I miss not having it so this year I am going to do it.

Excellent! I was looking to make the same ambrosia salad my grandmother made when I was little... This is it! I opted to not add the nuts as they are already in the pudding... I also added maraschino cherries - yummy! And yes you could eat the whole bowl - its that good!
