CHEWY PEANUT - OAT COOKIES 
1/2 c. butter, softened
2/3 c. packed brown sugar
1 egg, beaten
1/2 c. chunky peanut butter
1 1/2 tsp. vanilla
1/2 c. all-purpose flour
1/2 c. whole wheat pastry flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. rolled oats
1/2 c. chopped peanuts

Cream together butter and sugar. Add egg; beat well. Stir in peanut butter and vanilla; beat smooth.

Combine flours, soda, and salt. Stir until well mixed. Stir flour mixture into butter-sugar mixture. Add oats and peanuts. Drop from teaspoon onto greased cookie sheets. Flatten slightly with fork. Bake in 350 degree oven 12-14 minutes. Yield 3 dozen.
