BANANA-DATE NUT CAKE 
1 3/4 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 c. pitted dates
1/2 c. chopped walnuts
1/2 c. butter, softened
3/4 c. honey
1 egg
1 c. mashed very ripe bananas

Preheat oven to 350 degrees. Mix flour, baking soda, salt, cinnamon, dates and nuts. Cream butter and honey until well blended. Beat in egg and banana. Stir in dry ingredients. Pour into an oiled and lightly floured 9-inch square pan. Bake at 45-50 minutes or until a toothpick inserted in the center comes out clean. Turn on wire rack.
