MINT SURPRISE COOKIES 
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. butter
1 c. sugar
1/2 c. brown sugar
2 eggs, beaten
2 tbsp. cold water
1 tsp. vanilla

Sift flour, baking soda, and salt together. Cream butter, sugar, and brown sugar. Blend in eggs, cold water, and vanilla; beat well and add to dry ingredients. Dough may be a little sticky. Cover and refrigerate overnight.

The next day grease a cookie sheet lightly. Put a little dough on cookie sheet; place a mint wafer on top of dough. Make like a sandwich round but small. Place 1-1 1/2 inches apart. Put a pecan or small walnut on top. Bake at 375 degrees for 10-12 minutes. Cookies should be light.
