PECAN CRESCENTS | |
1 c. butter, softened 1/2 c. confectioners' sugar 2 tsp. vanilla 1 c. finely chopped pecans 1 3/4 c. flour (About 1/2 c. granulated sugar to roll) 1. Cream butter, confectioners' sugar and vanilla until light and fluffy. 2. Stir in pecans. 3. Gradually stir in flour until well blended. 4. Cover and chill about 1 hour (until firm enough to handle). 5. Divide dough into 8 pieces. 6. Roll each into 1/2 inch wide ropes (on lightly floured board). 7. Cut into 1 3/4 inch lengths. 8. Taper edges and shape into crescents. 9. Place 1 inch apart on ungreased cookie sheet. 10. Cook in preheated 300 degree oven (15 to 20 minutes) or until lightly golden. Lightly firm to touch - DO NOT LET THEM GET TOOO WELL DONE. 11. While warm, roll in granulated sugar and place in racks to cool. |
