CRUSTLESS COCONUT PIE 
1 egg
1 c. sugar
1/2 c. flour
Pinch of salt
1 tsp. vanilla
2/3 c. melted butter

Beat above ingredients well. Stir in 1 cup of coconut. May also add 1/2 cup chopped pecans and 1/2 cup chocolate chips. Pour into 8 or 9 inch pie pan that has been greased and floured. Bake at 350 degrees in metal pan or 325 degrees in glass pan until golden brown, about 30-40 minutes.
