ZUCCHINI CASSEROLE 
1 1/2 c. shredded zucchini
1/2 c. chopped onion
3/4 c. shredded carrots, optional
1 1/2 c. seasoned stuffing mix
1 can cream of chicken soup
1/2 c. sour cream or lowfat yogurt

Spread all ingredients in a greased 1 1/2 quart casserole. Top with 1 cup stuffing mix and 2 tablespoons butter. Bake at 350 degrees for 30 to 40 minutes.
