ZUCCHINI CASSEROLE | |
1 (8 oz.) pkg. Pepperidge Farm herb seasoned stuffing 1 stick butter, melted 1/2 c. sour cream 1 can cream of mushroom soup 1/2 c. shredded Cheddar cheese 1 med. onion, chopped 1 lg. carrot, shredded 3 c. diced zucchini, cooked for 8 minutes Preheat oven to 350 degrees. Mix melted butter and stuffing together. Place half of mixture in the bottom of 9 x 13 inch casserole dish (save the other half for the top). Mix remaining ingredients and put in casserole over stuffing. Sprinkle the rest of the stuffing mix over the top. Bake at 350 degrees for 25 minutes. |
