LARRY'S QUICK TACO CHICKEN
CASSEROLE
 
1 lb. skinless boneless cut up chicken strips
2 tbsp. of oil
1 pkg. taco seasoning
1 1/2 c. of instant rice
1 (4 1/2 oz.) chicken broth
1 (8 oz.) tomato sauce
1 (16 oz.) drained whole kernel corn
1 c. shredded cheddar cheese

Saute chicken in oil until oblique. Add taco seasoning and mix. Add tomato sauce, chicken broth and drained corn and mix in and bring to a boil. Add in rice and mix and cover and remove from heat. After rice is cooked, sprinkle cheese on and serve.

Variations: Can add chunky picante sauce and Doritos. Makes 4 to 6 servings eat and ole!
