EDITH CLARK'S BAKED BEANS 
1 lb. bag dried pea beans
1/3 lb. salt pork
1/2 tbsp. salt
1/2 tbsp. dried mustard
1/2 tsp. pepper
2/3 c. sugar
1/4 c. dark brown sugar
1/3 c. molasses

In large pan, add beans and cover with water until pan is approximately 1/2 full. Cover and soak overnight. Add water to cover beans and par boil for 20 minutes. While beans are par boiling, mix remaining ingredients in large bowl. Pour beans into bean pot and add remaining ingredients. Fill with water. Bake at 360 degrees for 6 to 6 1/2 hours, checking frequently that pot remains full of water.
