HORSERADISH POTATOES 
Dice 2 pounds cooked potatoes and place in baking dish.

SAUCE:

1/4 c. butter
1/2 tsp. salt
2 c. beef stock
2 eggs
3/4 c. bottled horseradish
2 tbsp. flour
1/4 tsp. pepper
1/2 c. half and half
Paprika

Melt butter in double boiler. Stir in flour and mustard. Gradually add stock and stir. Cook until thickens. Beat egg and cream together and add to cooked mixture. Return mixture to double boiler and cook until thick. Add horseradish, salt, pepper (taste before - if horseradish is hot you might not need salt and pepper).
