SWEET LOAF BREAD 
1/2 c. packed brown sugar
1/2 c. granulated sugar
1/2 c. canola oil
2 large eggs, slightly beaten
1 2/3 c. whole-wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1 tsp. cinnamon
1 1/2 c. finely grated carrots
1/2 c. raisins
1/2 c. chopped pecans

Preheat oven to 350°F. Lightly grease an 8 1/2 x 4 1/2-inch loaf pan. In a large bowl, combine sugars and oil; beat 1 minute. Add eggs, beating well. In a separate bowl, combine flour, soda, salt, nutmeg and cinnamon. Add to first mixture and stir to moisten. Fold in carrots, raisins and pecans. Pour into loaf pan and bake for 1 hour or until toothpick inserted in center comes out clean. Cool for awhile before removing from pan.
